The night begins with a sumptuous dinner at 8:00 PM, where our talented chefs, Adriana Resinas Hernández and Marco Estrada, will take you on a flavorful culinary journey. Their exquisite dishes are perfect for sharing with loved ones and new friends.

 **NEW YEAR’S EVE MENU 2026**   TASTING PLATTER   •Filete mignon en mole de plátano macho. (Filet mignon in plantain mole sauce).   •Cordero a las finas hierbas con mantequilla ahumada y puré de coliflor. (Herbed lamb with smoked butter and cauliflower purée).   •Róbalo con beurre blanc cítrico y hojas frescas.
