As Mexico City’s first and only restaurant to receive a Michelin Green Star, Baldío embodies a vision of gastronomy where food becomes a vehicle for regeneration. Through four courses, the conversation moves from ideas into the senses — celebrating Mexican biodiversity, ancestral knowledge and the possibility of a more regenerative relationship with the land.
