Led by Pablo Usobiaga, Baldío works closely with Arca Tierra and the chinampas of Xochimilco, connecting the table directly to the farmers, ingredients and ancestral agricultural systems that sustain it. As Mexico City’s first and only restaurant to receive a Michelin Green Star, Baldío embodies a vision of gastronomy where food becomes a vehicle for regeneration. Through four courses, the conversation moves from ideas into the senses — celebrating Mexican biodiversity, ancestral knowledge and the possibility of a more regenerative relationship with the land. From the chinampa to the table. ACT III · RITUAL As dinner gives way to night, we enter an immersive ritual performance — moving through sound, movement, symbolism and collective experience.
