A warm salad of roasted root vegetables and charred lettuce,
served with a smooth honey and dried chili emulsion that balances
sweetness, acidity, and a subtle hint of spice.
Warm, aromatic, and comforting.

MAIN COURSE

FIRE NEBULA

Fresh catch of the day served with a traditional Mexican mole made from
dried chilies, pineapple, plantain, and aromatic spices.
Accompanied by blanched asparagus, sautéed mushrooms,
and a light white wine sauce that enhances freshness and balance.

OR

MIDNIGHT EMBER PICANHA

Roast beef picanha finished with an artisanal sauce of dried chilies and cacao,
with smoky, deep notes.
Served with crunchy pumpkin seeds and peanuts,
and a creamy vanilla-infused sweet potato purée that adds harmony and warmth.
