SACBE RITUAL — Regeneration

This October, SACBE returns to Mexico City with a new intimate format: SACBE RITUAL — an evening unfolding in four acts.

Created in collaboration with México por el Clima, this edition explores regeneration — not only as an ecological practice, but as a way of relating to ourselves, our communities, and the living world around us.

ACT I · CONVERSATION
We begin with a curated conversation bringing together voices exploring regeneration, culture, nature and new ways of imagining our collective future.

ACT II · THE TABLE

We gather around the table for an intimate four-course dinner created by Baldío, rooted in the land, seasonality and regenerative Mexican cuisine.

Led by Pablo Usobiaga, Baldío works closely with Arca Tierra and the chinampas of Xochimilco, connecting the table directly to the farmers, ingredients and ancestral agricultural systems that sustain it. As Mexico City’s first and only restaurant to receive a Michelin Green Star, Baldío embodies a vision of gastronomy where food becomes a vehicle for regeneration.

Through four courses, the conversation moves from ideas into the senses — celebrating Mexican biodiversity, ancestral knowledge and the possibility of a more regenerative relationship with the land.

ACT III · RITUAL
As dinner gives way to night, we enter an immersive ritual performance — moving through sound, movement, symbolism and collective experience.

ACT IV · CELEBRATION
And finally, we dance. Music carries us from ritual into celebration, closing the evening in the way SACBE knows best: together.
